Sườn bò rửa sạch chần sơ qua nước sôi rồi xả qua nước lạnh để loại bỏ mỡ thừa. Cho sườn bò vào nồi cùng với hoa hồi, thanh quế, tiêu hạt, táo gai khô và táo tàu, đỏ nướng ngập sườn, đun lửa nhỏ khoảng 40 phút.
Đem chặt nhỏ sườn bò, ướp với nửa gói gia vị ướp các món nướng (tùy thích), đặt vào ngăn mát tủ lạnh khoảng nửa ngày.
Pha nửa gói gia vị còn lại với ít nước và 2 muỗng canh dầu ăn. Cho sườn đã ướp ra khay nướng có lót sẵn giấy bạc. Dùng cọ chải đều hỗn hợp vừa pha lên đều miếng sườn bò, đem nướng ở 200 độ C trong khoảng 15 phút. Sau đó lấy sườn ra, chải thêm 1 lớp sốt nữa, nướng tiếp 15 phút là được.
